Spicy paneer cauliflower rice

Ingredients
100 gm • CauliFlower
100 gm • Apetina Paneer (Buy From Sainsburies)
1 piece • Bell Pepper (Capsicum)
1 tsp • Olive Oil
100 gm • Tomatoes (Common)
2 tsp • Mixed Herbs
4 tsp • Mixed Spices (Of Your Choice)
40 gm • Sweet Corn - Kernels
40 gm • Peas
2 gm • Chillies
2 gm • Ginger (Fresh)
How to Prepare:
Wash and cut the cauliflower, then pat it dry.
Grate the cauliflower into small bits.
Optional: Remove any excess moisture (soggy cauliflower leads to soggy rice).
Chop the peppers and tomatoes, and measure out the peas and sweetcorn.
In a pan, heat some oil and add ginger, chilli (to taste), and your preferred spices (I use hing, paprika, and chilli flakes).
Add the tomatoes and cook until they form a gravy.
Stir in the paneer (you can pre-cook it until crispy or use an air fryer), along with the peas, sweetcorn, and cauliflower rice.
Cook for 8–10 minutes, covering with a lid for the last 5 minutes to allow the cauliflower to become tender.
Serve with a prayer and enjoy! ❤️
Note: If you’re not a fan of cauliflower rice, you can leave the veggies whole and make a delicious vegetable curry instead.
