Thai green noodle soup

Ingredients

1 tsp • Oil

1 tbsp • Blue Dragon Thai Green Curry Paste

1 Veggie Stock

1 tbsp • Lime Juice

1 tsp • Brown Sugar

Water

Minced Ginger

Mince Chillies

Quarter Can Light Coconut Milk

1 Pepper

40 gm • Mange Taunt

Spices: White Pepper, Black Pepper, Hing, Turmeric,


For serving:

100 gm • Zucchin Spiralised

50 gm • Udon Noodles

Lime



How to Prepare:

  1. Heat the oil over medium heat and add the ginger and chillies.

  2. Stir in the spices.

  3. Add the chopped pepper.

  4. Once the pepper is slightly cooked but still crisp, remove it from the pan.

  5. Pour in the water and vegetable stock.

  6. Stir in the sugar and lime juice.

  7. Add the coconut milk and bring it to a gentle simmer.

  8. Season with salt to taste.

  9. When ready to serve, heat the noodles and spiralized zucchini according to the instructions.

  10. Place the udon noodles and spiralized zucchini in a bowl.

  11. Pour the Thai green curry on top.

  12. Layer with the red pepper and mange tout.

  13. Squeeze fresh lime over the dish.

  14. Add chili flakes if you like it spicy.

  15. Garnish with coriander, if desired.
